Well, my planning was a little bad tonight. I forgot to take a picture until after it was all gone! I started a new movie today and wrapped earlier than I thought, so I actually had time to come home and make “supper” as my boyfriend likes to call it. I saw a recipe similiar to this on Rachel Ray and wanted to try it. It took all of about 15 minutes to make this meal, and it was a combo of random items I needed to use up in my fridge. I love it when you just throw something together and it turns out so good that
it might become a staple.
What you need:
ahi tuna steaks
bowl of mixed greens and arugula (actually used a wasabi arugula that I bought at trader joes, yum!)
sliced kumquats, about 5 (my favorite part of the meal)
shelled edamame (you can buy it already done)
Kumquat wasabi vinagarette:
1 teaspoon of wasabi
1 tablespoon of ponzu sauce
1 tablespoon of rice vinegar
3 tablespoons of olive oil
juice of one kumquat
Heat a pan or your grill to med high heat, season your ahi tuna steaks, grill for 1-2 minutes on each side. You want it pink in the middle!
