These recipe ideas are very late! They are actually from our big easter celebration. We cooked for about 20 people and my mom showed up with these gorgeous deviled eggs. She made three different kinds, all of which were a hit…even with the folks that claim to hate deviled eggs. Here are Mama Duff’s famous deviled eggs.
For the Bacon Jalapeno and Cheddar Eggs:
2 strips maple cured bacon, 1 fresh jalapeno (minced, seeded and deveined) grated cheddar, 1 green onion( top included),mayo and brown mustard, salt to taste, I used creole seasoning salt.
For the Hilly Dilly Eggs:
1 or 2 Tsp finely chopped Kosher pickles, 1 Tsp fresh dill finely chopped, 1 Tsp finely chopped salad olives, mayo and digon mustard to bind, creole salt, I like fresh tarragon in these too.
For the Truffle eggs:
I used 7 eggs and deviled 6, the 7th egg ( minced, white included) was used to make enough filling for the eggs to be full. Mix about 2 Tsp mayo, 1Tsp truffle oil, 1/4 tsp of dry mustard, 1 Tsp minced fresh chives, 1/4 teas. white pepper, truffle salt to taste.
Another great idea:
Green eggs and ham: minced lean ham, avocado, green onion (including top), mayo, mustard, small pinch of cayenne pepper (careful the heat grows!)
