The not so photogenic vegetarian sandwich…

So it turns out that sandwiches are quite difficult to photograph. Who knew? No matter how I placed it, flipped it, or stacked it it continued to look like a green and brown mess.

I happen to love following recipes that have a photo as I think they are a good road map to your what your final product should look like. That being said, there is no photo and your on your own on this one. I think you can do it! 🙂

What you need:
whole grain wheat bread ( try to use a grainy seedy bread)
non fat greek yogurt
chopped flat leaf italian parsley
one carrot (shredded, use a potato peeler)
tomato slices
mashed avocado
cucumber slices
a handful of crushed walnuts
and a handful of fresh alfalfa sprouts
course salt & pepper

how to:
i didn’t but feel free to toast the bread if you like
then use the greek yogurt like you would mayonnaise on one side of the bread, sprinkle the chopped parsley across the yogurt
on the other piece of bread use the mashed avocado as a spread
layer on the rest of the ingredients
