Quick great salad.
What you need:
a mandolin (thinly slices veggies)
a fennel bulb
2 or 3 stalks of celery
a handful of crushed walnuts
a lemon
approx 2 tablespoons of olive oil
coarse salt and pepper
choped thyme
chopped parsley
slice the fennel bulb and celery using the mandolin
toss in the rest of the ingredients
I used about one half of the lemon juice
