The Hilary.


I don’t know if it’s because my body is telling me to clean up my act or if it’s because summer is on it way, regardless I feel like cooking and eating really healthy. So welcome ‘The Hilary’…she is the originator and makes the best version no matter how many times I try to recreate it. This salad is so simple but packs a major flavor punch. So good that your skin, tastebuds and booty will write you a thank you note.

What you need:
Mixed baby greens
1 cucumber
2 carrots
2 stalks of celery
4 radishes
a handful of mini heirloom tomatoes or cherry tomatoes
1 avocado
approx 1/2 cup of feta or goat cheese
approx 6 or 7 sprigs of parsley (finely chopped)
approx 6 or 7 springs of mint (finely chopped)
approx 10 sprigs of chives (finely chopped)
approx 5 or 6 sprigs of dill (finely chopped)
3 tablespoons of olive oil
coarse sea salt
black pepper
juice of one lemon

how to:
Chop everything & toss
