Sometimes (and not very often!) I just don’t feel like making a big meal but i’m still in the mood to get creative in the kitchen. This meal came together quite quickly, I served this with a chilled greek green salad topped with gorgeous black kalamata olives and chunky feta. I don’t know if I have expressed my love of cheese but we have had a long loving relationship for quite awhile. I could eat it on just about anything, and my heart goes out to those of you that have to avoid it all together.
The great part about making a “cheese plate” style meal is that it’s all about your combos. Go for sweet & salty or something alittle spicy…the more creative the better. The possibilities are endless.
What you need:
I’m not going to give specifics but I’ll break down what I used for mine.
sourdough sliced into thin crostinis, swipe some olive oil across them and pop them under the broiler to give alittle crunch
a slice of white cheddar (i chose a seaside cheddar from fordfarm) and a slice of genoa salami
a small slice of blue cheese (i chose a pt reyes blue) and a quarter slice of a fresh fig
a small smear of goat cheese, a slice of a roasted red pepper and a fresh piece of basil from my backyard garden
last, I made this “green hummus” out of chickpeas, avocado, edamame, parsley, onion, s&p, garlic and lemon juice. great on pita bread!
Another solid combo is pear/ brie/ arugula or to get fancy… some sauteed mushrooms/ goat cheese/ truffle oil and remember grapes are always a great addition.
