Thai Chicken Soup

I just got over a pretty killer cold and I used all kinds of homemade remedies to kick it! I am pretty reluctant to hop on to antibiotics…I feel like it takes my body a long time to sort of, even out after…so when I find something that is healing and aids in an illness I’m usually quick to share! I found this recipe on Elana’s Pantry and it sounded so delish I had to give it a try. I loved the spicy kick! I added some fresh lemongrass and a small squeeze of grated ginger…Note, don’t mince the lemongrass. Keep it large! Then it’s easy to pull out of the soup when your ready to eat it. No one likes to bite in to the woody stalk of lemongrass.

    This soup looks so good! I’m addicted to soups as well : easy, quick, colorful, tasty, healthy…the best :)
    You’re right to not take antibiotics for a cold or a flue, it’s useless because they’re caused by viruses, not bacteria (antibiotics only work on bacteria, and one should use them if needed, they work well).

    This looks pretty delicious. And I am with you: if I can stay away from antibiotics using foods or home remedies, I will (thank you grandma Ina for that!). I have never used lemongrass, and maybe this is a great way to try it! Thanks for sharing!

      lemongrass is wonderful!!!! and has so many healing properties! smash the stalks to make the most of your lemongrass

    colds are caused by viruses. antibiotics don’t help for viruses. so please stay away from them for colds.

    Hello, Haylie. How are you? I am a Thai. This menu make me hungry but for Thai people will eat with a plate of hot rice, it will more delicious….^_^

    This soup sounds delicious and easy to prepare. I hate being on antibiotics because they always make me feel really tired and upset my stomach. I will have to remember this recipe the next time I’m sick. However, when I’m sick I usually don’t feel up to preparing meals.
