This appetizer was inspired by some of the boys in my life.
I’m always looking for an app that is filling enough to keep everyone from getting too hungry before dinner but something that won’t fill you up. Whenever I’m cooking for my guy friends, I try to include meat in the apps. My Bacon Wrapped Dates are always a crazy hit but since it is summer time, a spicy kielbasa and cold cole slaw takes the winning spot.
1 beer (I used a Guiness…and sipped on a Blue Moon)
2 tbsp of Whole Grain Mustard
2 tbsp Dijon Mustard
Package of Coleslaw cabbage
For the Coleslaw dressing: 2 tbsp of light mayo, 1 tbsp of rice vinegar, 1 tsp of lemon juice, pinch of salt and pepper, sliced jalapeno (seeds removed) and diced pineapple
Fill skillet with enough beer to almost cover the kielbasa. Simmer on low/med for 20 minutes. Toss cabbage with coleslaw dressing while the kielbasa is cooking. Mix together the Whole grain mustard and the Dijon mustard, set aside.
If available, once the kielbasa is done, Place on a hot grill for a minute on each side to add some nice grill marks.
