Hi Jess, you can buy pancetta a couple different ways…the deli counter usually serves it sliced thin, but you can usually find a nice little block of it at your local butcher. No worries if you can only find the thing variety though. Lay it in a pan like you would bacon, once nice and brown, lay on a paper towel and let cool. Once cool, crumble across the peach salad! xo HD
