Watermelon, Radish and Avocado Tacos

Watermelon, Radish and Avocado Tacos

Summer is quickly approaching and nothing quenches your thirst quite like watermelon. I love it paired with creamy avocado, crunchy radish and toasted pine nuts. They are so easy to make and stylish enough to serve as a party appetizer. I love, love, love these fruity roll ups.

What you need: Watermelon, Pine Nuts, Avocado, Radish, Butter Lettuce Cups, Olive Oil, White Wine Vinegar, lime, Sea Salt and Black Pepper

How to: Toast Pine Nuts under the broiler for 1-2 minutes or until they turn golden brown. Cut avocado and watermelon in to cubes. Slice radishes. Fill each lettuce cups with all the ingredients above, drizzle olive oil and splash vinegar across each taco. Shower with sea salt and pepper. Add a squeeze of lime if desired. Serve immediately before avocado starts to turn brown.

Love, Hayls

Hi Haylie, i’m from Brazil, Rio de Janeiro!
For what food I can learn to cook? I’m only 19 but want to start learning, just do not know where to start!
One more question … when you come to Brazil? I would love to see you live! I admire you very much! Big kiss and hope you can answer me! =)
Sorry if I wrote something wrong.

We just tried this recipe tonight, and it was so refreshing with our grilled chicken that I think I’m in love. In fact, I love it so much, that I am blogging a review of your recipe and plugging your new cookbook and TV show. Thanks for posting this recipe and check out the post next Friday, 6/27/14, over at SimplyHealthyEats.com.
