Fresh Basil Pinenut Pesto

This recipe is a very simple one, but is really a fantastic addition to your ever growing repertoire. You can do so many things with fresh pesto! Here are a couple ideas:

- add a dollop to the top of a caprese salad

-top off a piece of grilled chicken or fish

-a hard boiled egg or poached egg, dollop of pesto, and grilled asparagus for breakfast

-mix it in to the RGK Roasted Garlic Butter

-baby roasted potatoes, tossed in pesto

What you need:

Basil (about 3 cups)

Pinenuts (1 cup)

Garlic (4-6 cloves)

Olive Oil (1 cup)

Sea Salt & Pepper (1 tablespoon)

Lemon (the juice of one lemon)

*Options: parmesan reggiano (1 cup …I love it!), crushed red pepper flakes, olives, parsley*

 

How to:

Place all ingredients in a high powered blender or food processor. Pulse till smooth.

That’s it!

Now your ready to make all kinds of pesto magic.

This is one of my favorites.  Pasta (al dente) with fresh pesto, a big squeeze of lemon and a splash of crushed red pepper flakes.
